Cajun Corn Salad

Cajun Corn Salad
Servings: 4-5

Ingredients:

  • 4-5 medium-sized pieces of corn, shucked and the ends cut off
  • Sea salt
  • 1 tablespoon of oil, for toasting the corn
  • 1/3 cup of mayonnaise or sour cream
  • 1-2 teaspoons of Smith & Wollensky Famous Cajun Rub
  • 2/3 cup diced bell pepper (red and orange used for this recipe)
  • 1 tablespoon of freshly chopped cilantro

Instructions:

  1. Bring a large pot of water to a boil, then add the corn. Season the water generously with sea salt, then boil the corn for 5 minutes. Remove the corn and let it cool for 2-3 minutes.
  2. Add olive oil to a grill pan, and add the corn. Let the corn cook on high heat for 2-3 minutes per side or until it just starts to brown. Remove the corn, then slice it off the cob.
  3. Add mayonnaise, Smith & Wollensky Famous Cajun Rub, bell peppers, and corn to a large bowl, and mix to combine. Top with cilantro, and serve.
