Cucumber Salad

This cucumber salad is a fresh and light dish with a balance of different flavors. Each ingredient is marinated together and topped with fresh dill to enhance the crisp and mild sweetness of the cucumbers. 

Cucumber salad

 Servings: 4 

Ingredients: 

  • 6 seedless cucumbers 
  • Salt 
  • 1 red onion, chopped 
  • 1 carrot, peeled and shredded 
  • ¾ c white vinegar 
  • ¼ c balsamic vinegar 
  • 1 c sugar 
  • Fresh dill 

 Instructions: 

  1. Peel and slice cucumbers and mix in bowl with salt. Let stand for 30 minutes. 
  2. Place in colander and rinse with water. Squeeze our water and any seeds. Set aside. 
  3. Mix chopped onion, shredded carrot, both vinegars and sugar in a bowl and toss with cucumbers. 
  4. Let marinate for at least 2 hours. 
  5. Sprinkle with fresh dill. Refrigerate until ready to serve.
