This cucumber salad is a fresh and light dish with a balance of different flavors. Each ingredient is marinated together and topped with fresh dill to enhance the crisp and mild sweetness of the cucumbers.

Ingredients:
- 6 seedless cucumbers
- Salt
- 1 red onion, chopped
- 1 carrot, peeled and shredded
- ¾ c white vinegar
- ¼ c balsamic vinegar
- 1 c sugar
- Fresh dill
Instructions:
- Peel and slice cucumbers and mix in bowl with salt. Let stand for 30 minutes.
- Place in colander and rinse with water. Squeeze our water and any seeds. Set aside.
- Mix chopped onion, shredded carrot, both vinegars and sugar in a bowl and toss with cucumbers.
- Let marinate for at least 2 hours.
- Sprinkle with fresh dill. Refrigerate until ready to serve.
