Fresh Corn and Goat Cheese Salad

This salad provides a delightful combination of sweet, juicy corn paired with a creamy, tangy goat cheese. With a sprinkle of salt, pepper and sugar to taste, this dish delivers a perfectly balanced taste. 

Corn and goat cheese salad

 Servings: 4 

Ingredients: 

  • 4 ears of corn on the cob 
  • 3 medium scallions, diced 
  • ½ c green peppers, diced 
  • 2 T soft-style goat cheese 
  • 3 T white balsamic vinegar 
  • Sugar to taste (if desired) 
  • Salt and pepper to taste 

 Instructions: 

  1. Cook corn until tender, cool and remove kernels from cob. 
  2. Mix together corn, 2 scallions and green pepper. 
  3. Combine remaining scallion, goat cheese and vinegar in a blender or food processor and blend until smooth. Pour over corn mixture. 
  4. Season well with sugar (if desired) and salt and pepper to taste.
