This salad provides a delightful combination of sweet, juicy corn paired with a creamy, tangy goat cheese. With a sprinkle of salt, pepper and sugar to taste, this dish delivers a perfectly balanced taste.

Ingredients:
- 4 ears of corn on the cob
- 3 medium scallions, diced
- ½ c green peppers, diced
- 2 T soft-style goat cheese
- 3 T white balsamic vinegar
- Sugar to taste (if desired)
- Salt and pepper to taste
Instructions:
- Cook corn until tender, cool and remove kernels from cob.
- Mix together corn, 2 scallions and green pepper.
- Combine remaining scallion, goat cheese and vinegar in a blender or food processor and blend until smooth. Pour over corn mixture.
- Season well with sugar (if desired) and salt and pepper to taste.
