Greens and Beans

This classic Italian recipe is delicious and healthy as well as comforting. The blend of each ingredient offers a combination of spices and seasonings to enhance this dish.

 Servings: 2 to 3 

Ingredients: 

  • 1 head escarole 
  • 1 tsp minced garlic 
  • 1 tsp chicken base granules 
  • 1 T EVOO 
  • 1 c water 
  • ½ c pecorino Romano cheese 
  • 1 pinch crushed red pepper 
  • 1 c white cannellini beans 

 Instructions: 

  1. Chop and then blanch the head of escarole until just able to rip apart (do not overcook as it will get mushy). 
  2. Drain water and place escarole in sauté pan. 
  3. Add remaining ingredients to escarole. 
  4. Cook over medium high heat. 
  5. Mix and toss thoroughly until hot.
