This classic Italian recipe is delicious and healthy as well as comforting. The blend of each ingredient offers a combination of spices and seasonings to enhance this dish.

Ingredients:
- 1 head escarole
- 1 tsp minced garlic
- 1 tsp chicken base granules
- 1 T EVOO
- 1 c water
- ½ c pecorino Romano cheese
- 1 pinch crushed red pepper
- 1 c white cannellini beans
Instructions:
- Chop and then blanch the head of escarole until just able to rip apart (do not overcook as it will get mushy).
- Drain water and place escarole in sauté pan.
- Add remaining ingredients to escarole.
- Cook over medium high heat.
- Mix and toss thoroughly until hot.
