Baked Zucchini

A little crispy, super fast, and ultra-healthy, roasted zucchini with Italian seasoning and Parmesan really hits the spot.

Servings: 6

Ingredients:

  • 2 lbs. zucchini, washed, ends trimmed and sliced into 1/2 inch rounds
  • 2 T olive oil
  • 2 t minced garlic
  • 1 1/2 t Italian seasoning
  • 1/2 cup grated parmesan cheese
  • Salt and pepper to taste
  • 2 T chopped fresh garlic

Instructions:

  1. Preheat oven to 350 degrees. Line a baking sheet with aluminum foil. Spray with non-stick cooking spray.
  2. In a small bowl, mix together olive oil, garlic, Italian seasoning, salt and pepper.
  3. Place zucchini in a large bowl. Pour oil mixture over zucchini and toss well to coat.
  4. Pour onto baking sheet in a single layer. Top with parmesan.
  5. Bake in preheated oven until just starting to soften about 7 - 9 minutes. Remove zucchini and transfer oven rack closer to broiler. Preheat broiler.
  6. Let broil until cheese is golden brown and zucchini is tender, about 2 - 3 minutes.
  7. Sprinkle with parsley and serve warm.
