A little crispy, super fast, and ultra-healthy, roasted zucchini with Italian seasoning and Parmesan really hits the spot.

Ingredients:
- 2 lbs. zucchini, washed, ends trimmed and sliced into 1/2 inch rounds
- 2 T olive oil
- 2 t minced garlic
- 1 1/2 t Italian seasoning
- 1/2 cup grated parmesan cheese
- Salt and pepper to taste
- 2 T chopped fresh garlic
Instructions:
- Preheat oven to 350 degrees. Line a baking sheet with aluminum foil. Spray with non-stick cooking spray.

In a small bowl, mix together olive oil, garlic, Italian seasoning, salt and pepper.

Place zucchini in a large bowl. Pour oil mixture over zucchini and toss well to coat.

Pour onto baking sheet in a single layer. Top with parmesan.

Bake in preheated oven until just starting to soften about 7 - 9 minutes. Remove zucchini and transfer oven rack closer to broiler. Preheat broiler.

Let broil until cheese is golden brown and zucchini is tender, about 2 - 3 minutes.

Sprinkle with parsley and serve warm.
