Black Bean Salad

This Black Bean Salad recipe is great to keep in the fridge for busy weeks. Serve as a healthy side dish alongside your steak dinner.

Black bean salad

Ingredients: 

  • 2 cans (30oz) of small black beans, rinsed 
  • 1 can (15oz) corn 
  • 4 chopped green onions 
  • 1 jar (4 ounces) of diced pimientos 
  • ¼ cup chopped cilantro 
  • 1 small red pepper  
  • 1 jar Caesar dressing 

Instructions:

  1. Cut the root off the green onion and discard. 
  2. Make horizontal cuts at the desired thickness (suggest ½ inch slices). 
  3. Remove the stem from the red pepper and slice off each of the four segments. 
  4. Cut through each segment length wise, gather strips together and slice in the opposite direction into ½ inch dices. 
  5. Combine all ingredients together. 
  6. Mix well. 
  7. Add salt and pepper to taste. 
  8. Store in the refrigerator for 30 minutes. 
  9. Serve at room temperature.
