This Black Bean Salad recipe is great to keep in the fridge for busy weeks. Serve as a healthy side dish alongside your steak dinner.
Ingredients:
- 2 cans (30oz) of small black beans, rinsed
- 1 can (15oz) corn
- 4 chopped green onions
- 1 jar (4 ounces) of diced pimientos
- ¼ cup chopped cilantro
- 1 small red pepper
- 1 jar Caesar dressing
Instructions:
- Cut the root off the green onion and discard.
- Make horizontal cuts at the desired thickness (suggest ½ inch slices).
- Remove the stem from the red pepper and slice off each of the four segments.
- Cut through each segment length wise, gather strips together and slice in the opposite direction into ½ inch dices.
- Combine all ingredients together.
- Mix well.
- Add salt and pepper to taste.
- Store in the refrigerator for 30 minutes.
- Serve at room temperature.
