Bringing it to Room Temperature

Bring your steak to room temperature for about 30 minutes before cooking it.  This will help your steak cook evenly and prevent it from being tough or dry. When a steak is cold, the center will take longer to cook than the outside and cold meat will start to draw the juices outwards, towards the surface. 
 
When seasoning your steak ahead of time, just use a good salt initially and add your cracked pepper towards the end of cooking. The salt will help create a crust to lock juices in. The pepper can burn during searing and affect the taste.
