Servings: 2 to 4
Ingredients:
- 4 Lobster Tails with shells removed
- 3 T water
- 2 sticks unsalted butter, sliced into tablespoon pieces
- 3 T fresh lemon juice
- sliced garlic (optional)
- chopped chives (optional)
Instructions:
- Heat a saucepan over medium heat and then add 3 T water.
- Once warmed, add butter 1 tablespoon at a time, whisking in between each piece to make sure it's fully melted.
- Add garlic and chives if desired.
- Test temperature of the butter poaching mixture to make sure it is between 170°F and 180°F.
- Next add the lobster tails gently to the poaching mixture.
- Cook tails for 6 to 8 minutes, flipping every 2 until they are opaque.
- Remove tails and set aside.
- Add lemon juice to the butter mixture and whisk for 3 minutes.
- Drizzle poaching mixture over the tails and serve immediately.
