Cajun Cornbread Stuffing

Bring a southern twist to your dinner with this Cajun Cornbread Stuffing. The combination of ground sausage and vegetables with our famous Cajun rub will add a kick of flavor to your table. The perfect dish to enjoy at home with family and friends.

Cajun cornbread stuffing

Ingredients:

  • 1 loaf of cornbread 
  • 2 Tbs. olive oil 
  • 2 bell peppers, finely chopped 
  • 4 celery stalks, finely chopped 
  • 6 green onions, finely chopped
  • 16oz ground pork sausage
  • 1 Tbs. garlic, minced 
  • 1 can (14.5oz) diced tomatoes 
  • 2 large eggs 
  • 1 ½ cups chicken broth  
  • 2 tsp. Smith & Wollensky Famous Cajun Rub 

Instructions: 

  1. Preheat oven to 350 °F. 
  2. Separate cornbread into chunks and bake for 8-10 minutes or until lightly toasted. 
  3. Add oil to skillet and heat on medium. 
  4. Add bell peppers, celery and green onions to skillet and cook for 5-7 minutes. 
  5. Add the ground pork sausage, garlic and tomatoes. Continue to cook for 2 minutes.  
  6. In a large bowl, mix the eggs, chicken broth and Smith & Wollensky Famous Cajun Rub with the cornbread and vegetables. Transfer mixture to a baking dish. 
  7. Bake at 350 °F for 35-40 minutes. 
  8. Serve warm.
