Bring a southern twist to your dinner with this Cajun Cornbread Stuffing. The combination of ground sausage and vegetables with our famous Cajun rub will add a kick of flavor to your table. The perfect dish to enjoy at home with family and friends.
Ingredients:
- 1 loaf of cornbread
- 2 Tbs. olive oil
- 2 bell peppers, finely chopped
- 4 celery stalks, finely chopped
- 6 green onions, finely chopped
- 16oz ground pork sausage
- 1 Tbs. garlic, minced
- 1 can (14.5oz) diced tomatoes
- 2 large eggs
- 1 ½ cups chicken broth
- 2 tsp. Smith & Wollensky Famous Cajun Rub
Instructions:
- Preheat oven to 350 °F.
- Separate cornbread into chunks and bake for 8-10 minutes or until lightly toasted.
- Add oil to skillet and heat on medium.
- Add bell peppers, celery and green onions to skillet and cook for 5-7 minutes.
- Add the ground pork sausage, garlic and tomatoes. Continue to cook for 2 minutes.
- In a large bowl, mix the eggs, chicken broth and Smith & Wollensky Famous Cajun Rub with the cornbread and vegetables. Transfer mixture to a baking dish.
- Bake at 350 °F for 35-40 minutes.
- Serve warm.
