Ingredients:
- 1lb of S&W Steak Tips
Steak Marinade
- 3 tbsp olive oil
- 2 tbsp balsamic vinegar
- ½ salt
- ¼ pepper
- ¼ onion powder
- ½ garlic powder
Chimichurri Sauce
- 1 small shallot, diced
- ¾ cup parsley, chopped
- 1 garlic clove, minced
- 1 tsp oregano
- ½ tsp pepper
- ½ tsp red pepper flakes
- 1 tsp salt
- ⅓ cup olive oil
- 3 tbsp red wine vinegar
Instructions:
- Mix the ingredients for the steak marinade. Add the steak tips and marinate for at least an hour.
- Combine the dry chimichurri ingredients (everything besides the olive oil and red wine vinegar) in a food processor. Pulse until chopped and combined.
- Stir in the olive oil and red wine vinegar to the pulsed parsley mixture.
- Preheat your grill.
- Grill the steak tips for 2-3 minutes on each side until the steak is medium rare.
- Drizzle the chimichurri sauce on top and serve with pearled couscous.
- Optional: Add 2 tbsp of the chimichurri sauce to the couscous for added flavor.
