This creamy polenta is infused with a generous amount of garlic butter to enhance its indulgent flavor. With just a sprinkle of cheese, an extra spoonful of garlic butter and freshly cracked pepper, this dish will melt in your mouth.
Ingredients:
- 3 cups cold milk
- 1 cup water
- 1 tsp salt
- ½ tsp pepper
- 1 cup instant polenta
- ½ cup freshly grated Parmesan cheese, plus additional for garnish
- 1 cup of unsalted butter, softened
- 1 Tbs. minced garlic
- 1 tsp. garlic salt
- ¼ cup of Parmesan cheese, grated
- 1 tsp. lemon juice
- 1 tsp. parsley
- 1 tsp. lemon zest
Instructions:
Garlic Herb Butter:
- Combined softened butter, Parmesan cheese, and minced garlic into a bowl and combine well.
- Mix in garlic salt, lemon juice and parsley.
- Add lemon zest to top
Garlic Herb Butter Polenta:
- Add the milk, water, salt, and pepper to a medium pot set over medium-high heat.
- Slowly whisk in the instant polenta, avoiding clumps.
- Allow the mixture to bubble then reduce heat to simmer, whisking regularly, for about 5 minutes or until the polenta reaches a thick, yet still manageable consistency.
- Remove pot from heat and whisk in garlic herb butter, followed by the grated Parmesan.
- Serve with a little more grated Parmesan, an extra dollop of garlic herb butter, and a turn or two of fresh-cracked pepper
