Garlic Herb Butter Polenta

This creamy polenta is infused with a generous amount of garlic butter to enhance its indulgent flavor. With just a sprinkle of cheese, an extra spoonful of garlic butter and freshly cracked pepper, this dish will melt in your mouth. 

Polenta with garlic herb butter

 Ingredients: 

  • 3 cups cold milk 
  • 1 cup water 
  • 1 tsp salt 
  • ½ tsp pepper 
  • 1 cup instant polenta 
  • ½ cup freshly grated Parmesan cheese, plus additional for garnish 
  • 1 cup of unsalted butter, softened 
  • 1 Tbs. minced garlic 
  • 1 tsp. garlic salt 
  • ¼ cup of Parmesan cheese, grated 
  • 1 tsp. lemon juice 
  • 1 tsp. parsley 
  • 1 tsp. lemon zest 

Instructions: 

Garlic Herb Butter: 

  1. Combined softened butter, Parmesan cheese, and minced garlic into a bowl and combine well. 
  2. Mix in garlic salt, lemon juice and parsley. 
  3. Add lemon zest to top 

 Garlic Herb Butter Polenta: 

  1.  Add the milk, water, salt, and pepper to a medium pot set over medium-high heat. 
  2. Slowly whisk in the instant polenta, avoiding clumps. 
  3. Allow the mixture to bubble then reduce heat to simmer, whisking regularly, for about 5 minutes or until the polenta reaches a thick, yet still manageable consistency. 
  4. Remove pot from heat and whisk in garlic herb butter, followed by the grated Parmesan. 
  5. Serve with a little more grated Parmesan, an extra dollop of garlic herb butter, and a turn or two of fresh-cracked pepper
