Orzo Salad

This pasta salad recipe is perfect for picnics, cookouts or a quick side for your steak any night of the week. 

Orzo Salad


  • 1 lb. orzo pasta
  • 18 oz. cauliflower
  • 5 oz. onion
  • 3 oz. red pepper
  • 2 oz. green pepper
  • 10 oz. cherry tomatoes
  • 3 Tbs. olive oil
  • 10 oz. broccoli
  • Locatelli cheese for garnish
  • Pine nuts for garnish


  • Cook the orzo as directed and let cool.
  • Cut the cauliflower and broccoli into small pieces. Dice the peppers and onions and cut the cherry tomatoes into quarters. Place all veggies onto a baking sheet and toss with olive oil and salt & pepper. Bake at 350 for 15 minutes.
  • Put veggies into bowl and refrigerate until cold.
  • Once everything is cold, mix veggies and orzo. Season with salt and pepper to taste and garnish with cheese and pine nuts if desired.
