This pasta salad recipe is perfect for picnics, cookouts or a quick side for your steak any night of the week.
Ingredients:
- 1 lb. orzo pasta
- 18 oz. cauliflower
- 5 oz. onion
- 3 oz. red pepper
- 2 oz. green pepper
- 10 oz. cherry tomatoes
- 3 Tbs. olive oil
- 10 oz. broccoli
- Locatelli cheese for garnish
- Pine nuts for garnish
Instructions:
- Cook the orzo as directed and let cool.
- Cut the cauliflower and broccoli into small pieces. Dice the peppers and onions and cut the cherry tomatoes into quarters. Place all veggies onto a baking sheet and toss with olive oil and salt & pepper. Bake at 350 for 15 minutes.
- Put veggies into bowl and refrigerate until cold.
- Once everything is cold, mix veggies and orzo. Season with salt and pepper to taste and garnish with cheese and pine nuts if desired.
