Preheating your Skillet

A cast iron skillet is the ideal pan for cooking your steak. Begin by preheating your stove to medium heat to gradually warm up the skillet. After a few minutes, increase the heat to medium-high and let rest for a recommended 10 minutes. 
 
To test if your skillet is hot enough, put a few drops of water on the surface. If the water jumps up before evaporating, then the skillet is ready. If the water evaporates immediately, continue to preheat your skillet. Once your skillet is heated, lightly coat it with a thin layer of oil with a high smoke point before cooking your steak.
 
Preheating and coating your skillet will allow your steak to cook evenly and help form a delicious crust on the outside of the steak that will trap the juices inside to achieve the perfect temperature and tenderness.
