This unique and delicious dish combines the fresh flavor of asparagus with the sweet and tart hints of raspberry. Each piece is lightly coated with a raspberry mixture and then grilled to achieve the perfect smoky, charred flavor. This dish is best served warm and paired with your favorite cut of steak.
Ingredients:
- 1 bunch of asparagus
- 1 Tbs. raspberry balsamic vinegar
- 1 Tbs. sunflower oil
- 1 cup feta cheese
- 1 beefsteak tomato
- 1 Tbs. chopped basil
- 1 Lemon
Instructions:
- In a large bowl mix asparagus with a light coat of sunflower oil and raspberry balsamic vinegar.
- Lay the asparagus on a foil sheet.
- In a small bowl mix a cup of feta cheese with a chopped tomato and a tbsp of basil.
- Bring your grill to a medium heat.
- Keep your asparagus on the tin foil sheet and put it on the grill.
- Turn the asparagus regularly with your tongs.
- Grill for 20-25 minutes and add your feta cheese mixture on top for the last 5 minutes on the grill.
- Slice your lemon and use as garnish on top.
- Serve warm.
