Roasted Asparagus with Balsamic Shallot Butter

The rich flavor of the balsamic vinegar combined with chopped shallots is perfect to brush on top of your roasted asparagus. 

Asparagus with a balsamic drizzle and butter

 Servings:  6 to 8 

Ingredients: 

  • 3 T finely chopped shallots 
  • 2 T butter, melted 
  • 2 T balsamic vinegar 
  • 1 tsp chopped fresh thyme 
  • ¾ tsp salt 
  • 2 lbs. fresh asparagus 
  • Cooking spray 

 Instructions: 

  1. Combine shallots, butter, vinegar, salt and thyme. Stir well with a whisk. 
  2. Trim off tough ends of the asparagus and place in single layer on a baking sheet coated with cooking spray. 
  3. Cover with foil and bake in a preheated 450-degree oven for 10 minutes. 
  4. Remove the foil and bake an additional 15-20 minutes or until asparagus is tender. Pour butter mixture over asparagus and toss gently to coat.
