The rich flavor of the balsamic vinegar combined with chopped shallots is perfect to brush on top of your roasted asparagus.
Servings: 6 to 8
Ingredients:
- 3 T finely chopped shallots
- 2 T butter, melted
- 2 T balsamic vinegar
- 1 tsp chopped fresh thyme
- ¾ tsp salt
- 2 lbs. fresh asparagus
- Cooking spray
Instructions:
- Combine shallots, butter, vinegar, salt and thyme. Stir well with a whisk.
- Trim off tough ends of the asparagus and place in single layer on a baking sheet coated with cooking spray.
- Cover with foil and bake in a preheated 450-degree oven for 10 minutes.
- Remove the foil and bake an additional 15-20 minutes or until asparagus is tender. Pour butter mixture over asparagus and toss gently to coat.
