This unique take on a spinach side dish adds additional protein and makes a robust option to accompany your steaks.

Ingredients:
- 2 T butter
- 1 T flour
- 1 T granted onion
- 2 cups fresh cooked spinach
- 3 eggs
- 1/2 cup grated cheddar cheese
- Salt and pepper to taste
Instructions:
- In a skillet, melt butter and then stir in flour and onion.
- Cook mixture over medium heat, stirring for about 5 minutes or until lightly browned.
- Add spinach and cook until warmed through.
- Whisk eggs in bowl and add to the skillet.
- Add in cheese, salt and pepper and cook for 5 minutes until the eggs are set and cheese is melted.
