Skillet Spinach

This unique take on a spinach side dish adds additional protein and makes a robust option to accompany your steaks.

Spinach in a skillet

Servings: 3-4

Ingredients:

  • 2 T butter
  • 1 T flour
  • 1 T granted onion
  • 2 cups fresh cooked spinach
  • 3 eggs
  • 1/2 cup grated cheddar cheese
  • Salt and pepper to taste

Instructions:

  1. In a skillet, melt butter and then stir in flour and onion.
  2. Cook mixture over medium heat, stirring for about 5 minutes or until lightly browned.
  3. Add spinach and cook until warmed through.
  4. Whisk eggs in bowl and add to the skillet.
  5. Add in cheese, salt and pepper and cook for 5 minutes until the eggs are set and cheese is melted.
