Deglazing is a process of adding liquid to your pan while it is hot to remove the residue stuck after cooking your steaks. This process will help you to save the extra flavor that is left from your steaks after they are cooked. Wine, sherry and vermouth are common liquids used to deglaze.
After cooking your S&W steaks, remove them from your pan and pour off any extra fat. There will be caramelized bits left from the juices of the meat.
