Thawing: Thaw in refrigerator overnight
Handling: Do not refreeze. Thawed product can be stored under refrigeration for up to 3 days
Cooking Instructions:
1. Season roast on all sides with kosher salt and black pepper.
2. Sear the roast well in a large skillet on both ends and the fat side.
3. Place in a roasting pan and add any other preferred ingredients such as vegetables to the pan.
4. Roast in a 325°F pre-heated oven for 18 minutes per pound, fat side up.*
5. Check internal temperature 20 minutes before roast is expected to be done. For medium rare, cook to internal temperature of 118°F. Remove from oven, cover with foil and let it rest for 30 minutes prior to serving to maintain the roast’s juiciness before carving.
*For a rare or more well-done roast, follow these guidelines:
- Rare, 15-16 minutes per pound, 110°F
- Medium Rare, 16-17 minutes per pound, 118°F
- Medium, 18-19 minutes per pound, 125°F
- Medium Well, 19-20 minutes per pound, 140°F
- Well Done, 21 minutes per pound, 150°F
